Join Hidden Beach for a welcoming, hands-on seafood cooking workshop inspired by the Stade’s fishing heritage. With Cindy’s guidance, learn to prepare fish, master a simple pan-fried dish and create a warming seafood stew, then sit down together to enjoy what you have cooked.

Suitable for beginners and confident home cooks. Demonstrations, hands-on cooking and a shared meal, with ingredients, kitchen equipment, Cindy’s tuition and recipe sheets to take home.

Proposed menu

Pan-fried fish with lemon and herbs — learn to portion fish, check for bones and cook it with crisp skin and a tender centre.

A warming coastal fish stew — a tomato-based stew with garlic, fennel and seasonal fish. Shellfish may be included if suitable for the group.

Herby potatoes and a fresh seasonal salad — simple accompaniments that turn the dishes into a complete meal.

The menu will use locally landed fish where available. The final selection will be agreed nearer the date according to availability.

What you will learn

What to look for when buying fresh fish; safe storage, handling and preparation; how to check for and remove bones; pan-frying and judging when fish is cooked; building a flavourful stew without overcooking the fish; and adapting recipes to different fish and budgets.

Workshop programme

10:00–10:15am — Welcome, menu introduction and kitchen safety

10:15–10:40am — Fish preparation demonstration, buying and storage advice

10:40–11:15am — Prepare ingredients and begin the stew in small groups

11:15–11:55am — Pan-frying demonstration and practical cooking

11:55am–12:20pm — Finish the stew, potatoes and salad

12:20–12:50pm — Shared meal and discussion

12:50–1:00pm — Questions, recipe handouts and wrap-up
